We had in mind for a while to go for one visit to the cellar<\/strong> at the company of Filippo <\/strong>only half an hour by car from us,\u00a0but the time available was always short and there were always too many things to do that we ended up putting off every time.<\/p>\n\n\n\n

Then the opportunity presented itself for an invitation from them and, since in this pandemic period we have too much time available, we took advantage of a beautiful sunny day to try firsthand the experiences that the cellar offers.<\/p>\n\n\n

We had already tasted their wines and, in addition to having found them excellent, the thing that intrigued us the most was their type of agriculture. In fact, the company has been practicing organic and biodynamic agriculture for years with the help of work horses for operations in the vineyard and geese for weed control.<\/p>\n\n\n\n

Our tour began with a carriage ride during which Emma, \u200b\u200bone of the owners of the company, passionately explained to us the philosophy behind their work, showed us part of the vineyard, in total there are 30 hectares of vineyards, and we enjoyed an incredible panorama of Assisi, Spello and the other villages surrounding Cannara.<\/p>\n\n\n\n

Back in the cellar, Emma showed us the production part explaining the various phases of wine processing, from the arrival of the grapes in the cellar, to the maceration in the barrels, to the bottling.<\/p>\n\n\n

Finally, the visit ended with the tasting of some of their wines accompanied by a tasty platter based on products from organic farms in Umbria and the traditional torte al testo made by them.<\/p>\n\n\n\n

We enjoyed all the wines chosen for the tasting, but the one that surprised us most of all was the Vernaccia di Cannara, a sweet red wine. At the first sip I immediately thought of how good it would be paired with our chocolate and strawberry mousse \ud83d\ude0b<\/p>\n\n\n\n
